Air Macau’s business class passengers can now indulge in an exceptional culinary experience, thanks to a groundbreaking partnership between MGM and servair Macau, a member of gategroup. Launched on March 1, 2025, this collaboration brings a meticulously curated inflight menu inspired by MGM’s world-class dining establishments, setting a new benchmark for gastronomy on key international routes.

A Fusion of Culinary Excellence and Aviation Expertise

The collaboration brings the artistry of Imperial Court (Lingnan cuisine) and Aux Beaux Arts (French bistro) into the cabin, with 36 expertly crafted dishes now served on flights to Beijing, Shanghai, Tokyo, Osaka, and Seoul.

A project of this scale required a full year of meticulous planning, with teams from MGM, Air Macau, and servair Macau working tirelessly to perfect each dish. The result is a menu that masterfully balances traditional flavors with innovative techniques, ensuring that every dish maintains its authenticity and quality even at cruising altitude.


Redefining Business Class Dining

The new menu was officially unveiled at an Air Macau press conference on February 20, 2025. During the event, Nigel Everard, Regional President of gategroup’s Asia Pacific & Middle East (APME), and Franck Bouat, CCO Asia Pacific & Managing Director Asia, highlighted the strength of the long-standing partnership between Air Macau and servair Macau. They expressed gratitude for the unwavering support from Air Macau’s team and reaffirmed servair Macau’s commitment, under the leadership of General Manager Cheng Wen, to continuously enhancing onboard meal services.

Mrs. Yuan Jing, General Manager of Cabin Service at Air Macau, applauded the initiative, recognizing the dedication and expertise behind the menu’s creation. She emphasized the teamwork that brought this vision to life, reinforcing the airline’s commitment to delivering a superior inflight experience.

“This collaboration is a celebration of culinary innovation and inflight expertise,” said Chef Dave Minten, Regional Executive Chef at gategroup. Attending the press conference, he shared insights into the meticulous preparation process: “From the intricate layering of cubical brioche bread to the refined craftsmanship of our Pâté en Croûte, this project was a remarkable exchange of skills. MGM Grand chefs worked closely with our team, introducing advanced culinary techniques while also learning from each other. Collaborations like this are essential in our industry, where hospitality and aviation chefs unite to create something truly extraordinary.”
